Sea Bass and Salmon Tartare A refined and harmonious dish, with sea bass and salmon tartare, Maldon salt, Sichuan pepper, extra virgin olive oil, fresh chives and caviar. A perfect balance of flavours and textures, representing the harmony of Yin and Yang.

Man Tou

A small oriental bun made with soft, fluffy milk, steamed and served with OToro tuna belly tartare, caviar, sea urchin and chives. An enveloping and refined experience.

UmiMame

Scallops marinated in sake, seared with Japanese panko breadcrumbs. Served on edamame cream, with yuzu foam and lime zest for a fresh, citrusy touch.

Tataki Mango Tuna

Seared tuna with extra virgin olive oil, rice vinegar and lime, soy sauce and chives, topped with pistachio grains. Served with a mango coulis, which adds a touch of sweetness and tropical flavour to the dish.

Sushi e Sashi

A mixed plate of Japanese classics with a contemporary twist. Nigiri, gunkan and sashimi, prepared with ingredients that create a harmony of flavours and aromas, each piece carefully prepared to offer a unique and unforgettable taste experience.

ChaSoba Cacio&Pepe

Spaghetti with green tea, flavoured with sake for a touch of oriental elegance. Served on a cream of cheese and pepper, with red prawn tartare and shavings of fresh black truffle. A dish that combines Italian tradition and Japanese innovation.

Hamachi

Yellowtail marinated in rice wine and Sichuan pepper, seared with a crispy black sesame crust. Served with fresh pico de gallo and nori seaweed, creating a unique contrast that is both delicate and bold at the same time.

Mekajiki Roll
